Step 1
Heat some Coconut Oil (to taste) in another pan.
Step 2
When heated, toss in your Vegan Cold Cuts (to taste) and cook until it becomes slightly browned and crispy. All vegan meat cooks up differently- so keep an eye on it.
Step 3
Remove from heat.
Step 4
In a deep sauce pan or deep fryer, bring oil temperature up to 375 degrees F (190 degrees C).
Step 5
Carefully toss in Potatoes (2) and cook for 3 minutes until they are soft but not browned.
Step 6
Remove the potatoes and drain on paper towel. Allow the par-fried potatoes to dry completely.
Step 7
Bring oil temperature back up to 375 degrees F (190 degrees C) and return the now dried potatoes to the oil again and cook a second time for 4-5 minutes, or until golden and crispy.
Step 8
Remove from oil and drain on paper towel & toss with a sprinkle of Salt and Pepper (to taste) .
Step 9
Place your fries into a dish or shallow bowl.
Step 10
Top your fries with Vegan Cheese (to taste) and Vegan Scrambled Eggs (to taste) . Drizzle with Hollandaise sauce and sprinkle with vegan fa'con and garnish with Fresh Chives (to taste) . Serve and enjoy!
