These fluffy almond waffles are gluten-free and dairy-free. The key to fluffy texture is whipping egg whites separately and thanks to tapioca it stays together properly.
Separate the Farmhouse Eggs® Large Brown Eggs (2), egg yolks and whites.

Whisk the egg whites until foamy. Add Honey (2 Tbsp). Add Vanilla Extract (1 tsp) and whisk until soft peaks are formed. Set aside.

Add egg yolks, Coconut Butter (1 tsp), and Cashew Milk (1/3 cup) into dry ingredients and whisk it together. Gently fold in the egg white mixture.

Grease the waffle machine with Coconut Butter (to taste) and add about 1-2 tablespoons of batter to the machine. Repeat the same process with the rest of the batter.
6.
Serve right away with your favorite topping.
