This is a recipe for the local Hawaiian dish, Oxtail Soup - a simple comfort food that my family adores.

Beef Bouillon Cubes
, peeled, thinly sliced
In a large pot over medium heat, add
Vegetable Oil (1 Tbsp)
. When the oil is hot, add the
Oxtails (4 lb)
and brown. Once browned, fill the pot with enough
Water (to taste)
to cover meat, and bring to a boil.
With a ladle, carefully skim off the scum. Add the
Beef Bouillon Cubes (3)
Garlic (2 cloves)
Fresh Ginger (1/2 in)
Finally, add in the
Raw Peanuts (2 1/3 cups)
, then let simmer for 3 hours. If you want to add some vegetables, add them 10-15 minutes before you are ready to serve to the soup.
Remove from heat, and serve with
White Rice (to taste)
