Step 1
Preheat the oven to 400 degrees F (200 degrees C).
Step 2
In a small bowl, make the spice rub by mixing together the Chili Powder (1 Tbsp) , Brown Sugar (1 tsp) , Smoked Paprika (1/2 tsp) , Salt (1/2 tsp) , and Ground Black Pepper (1/4 tsp) .
Step 3
Place the Salmon Fillets (4) on a cutting board. Pat dry with a paper towel, then rub each portion generously with the spice rub.
Step 4
Bake at 400 degrees F (200 degrees C) for 8-10 minutes, or until browned on top and cooked to your desired level of doneness.
Step 5
While the salmon cooks, prepare the salsa. Add the Pineapple Tidbits (1 can) to a nonreactive mixing bowl. Stir in the Red Onion (1) , Fire Roasted Diced Chilies (2 Tbsp) , Fresh Cilantro (1 bunch) , juice of a Lime (1) , and Salt (1/8 tsp) .
Step 6
To serve, spoon the salsa over the cooked salmon portions.
