Cooking Instructions
1.
Preheat oven to 350 degrees F (180 degrees C).
2.
Add Olive Oil (4 Tbsp), Salt (1 tsp), Ground Black Pepper (1/4 tsp), and Cherry Tomatoes (2 cups) to a bowl and mix well.
3.
Place the tomatoes on a baking dish. Create an open space by pushing the tomatoes to the edges of the baking dish.
4.
Place the Atlantic Salmon Fillet (1) in the open space.
5.
With a spoon, spread the Basil Pesto (1/3 cup) over the salmon.
6.
Top with Shredded Mozzarella Cheese (1 cup) and sprinkle Fresh Basil (2 Tbsp), if desired.
7.
Bake for 30 minutes.
8.
Serve with a side of your choice, such as Au Gratin Potatoes.
