Author's Notes

If your dates are quite small, you can stuff only one whole almond in each date.

You can keep the chocolate-covered date in a sealed container for up to a week and can enjoy it anytime.

Cut a slit on each Medjool Dates (20) lengthwise and remove the pit.

Fill about 1 tsp of Crunchy Peanut Butter (1/2 cup) in each date, then stuff 2 Almonds (40) in the middle. Close the dates, and set them aside.

Place the Dark Chocolate (3/4 cup) and Coconut Oil (2 tsp) in a microwave-safe bowl. Melt in the microwave in 15-second increments, stirring in between and until smooth.

Place dates in the melted chocolate and use a spoon to help coat the date. Use a fork to scoop out and place the chocolate-covered date on a parchment paper-lined tray.

Sprinkle with Almonds (4 Tbsp) and Sea Salt Flakes (1 Tbsp).

Place into the freezer for about 10 minutes and let the chocolate set. Serve once the chocolate has set.
