These Berry Maple Muffins with Cheese take almost no effort to make, and are prepared incredibly fast. Perfect for chasing away Monday blues, or a weekend breakfast in bed!

Cooking Instructions
1.
Preheat oven to 340 degrees F (170 degrees C).

Mix the Cake Flour (1 1/3 cups), Baking Powder (2 tsp), and Salt (1 pinch) with a whisk.
3.
In a separate bowl, beat together the Maple Syrup (2.5 oz), Soy Milk (3.5 oz), and Vegetable Oil (2 oz) with a whisk until thoroughly combined.
4.
Combine the dry and wet ingredients with a whisk to form the muffin batter base.
5.
Add the Shredded Cheese (2/3 cup) and Fresh Strawberries (5), diced. Fold into the muffin batter with a spatula.
6.
Scoop a ladle of the muffin base into each of the muffin cups. Using an ice cream scooper will make it easier to get even portions, and creates less mess!
7.
Top with Fresh Strawberries (2), quartered, and sprinkle on a bit more shredded cheese.
8.
Bake for 25 minutes.
9.
Serve and enjoy!
