Incredible Cilantro Lime Rice

This tasty vegan rice dish is flavored with lime zest, lime juice and roughly chopped cilantro and can be prepared in under 30 minutes.

Ingredients

2 tablespoon Olive Oil
1 1/2 cup Jasmine Rice
2 cup Water
1 cup Vegetable Stock
3/4 teaspoon Salt
2 tablespoon Lime Juice

STEP 1
In a large pan add Olive Oil (2 tablespoon) and Jasmine Rice (1 1/2 cup). Stir over medium heat for 4-5 minutes
STEP 2
Once rice starts toasting add Garlic (1 clove), Lime (2), Ground Black Pepper (1/8 teaspoon) and stir well.
STEP 3
Next add Salt (3/4 teaspoon) and stir.
STEP 4
Turn the heat up to medium-high and add the Vegetable Stock (1 cup) and Water (2 cup). Bring up to a boil.
STEP 5
Place the lid on, lower the heat and let it simmer for about 15 minutes.
STEP 6
After the rice is about 90 percent cooked, turn of the heat and let it continue to cook with the lid on for another 10 minutes
STEP 7
Using a fork, fluff up the rice. Add the Lime Juice (2 tablespoon) and the Fresh Cilantro (1 cup). Mix well, serve and enjoy!
