Cooking Instructions
1.
Into the bowl of a stand mixer, add
Water (1/2 cup)
. Sprinkle
Gelatin Powder (2 pckg)
over the surface of the water. Let sit for 5 minutes.

Into a pot over high heat, add
Granulated Sugar (3/4 cup)
,
Salt (1/8 tsp)
,
Light Corn Syrup (1/4 cup)
, and
Water (1/4 cup)
. Lower temperature to medium and cook until mixture reaches 240 degrees F (115 degrees C). Stir occasionally.

Microwave the gelatin and water mixture until melted. Return to the stand mixer, add
Light Corn Syrup (1/4 cup)
, and begin to mix on low speed.

Slowly add the heated sugar mixture into the stand mixer as you continue to mix on low speed.

Turn speed to medium and mix for 5 minutes.

Turn speed to medium-high and mix for another 5 minutes.
7.
Add
Vanilla Extract (1/2 Tbsp)
. Start on low so the extract doesn't splash everywhere then mix on the highest speed for 3 minutes.
8.
Transfer mixture to a greased 8 by 8-inch baking pan. Smooth out.
9.
Sift
Powdered Confectioners Sugar (1/3 cup)
over the top. Shake the pan to even out the layer of sugar.
10.
Let marshmallows rest for at least 6 hours, uncovered, to dry.
11.
Shake off excess powdered sugar. Slice marshmallows into desired shapes.
12.
Marshmallows will keep for up to one month. Enjoy!
