After I made a few truffles last month and loved loved LOVED them, I started perusing my bar to see what else would taste good in a truffle. Coconut, coffee, and chocolate were the prefect combination.

Unsweetened Shredded Coconut
Cooking Instructions

Grind the Coconut Cookies (2 cups) and melt the Coconut Oil (2 Tbsp), Mix the coconut cookies, Unsweetened Cocoa Powder (4 Tbsp), Coffee Liqueur (4 Tbsp), coconut oil, and Powdered Confectioners Sugar (1 cup) in a medium bowl.

When the dough is fully mixed and slightly sticky, roll into balls. Roll the balls in the Unsweetened Shredded Coconut (1 cup).

Chill at least an hour before serving. Enjoy!
