The trick to this easy aioli is combining mayonnaise with a roasted garlic "paste" and a little lemon and olive oil, then bam! The perfect dipping sauce. If you're feeling crazy, try throwing a little Sriracha in there to spice things up.

Cooking Instructions

Preheat oven to 400 degrees F (205 degrees C).

On a small baking tray, roast unpeeled
Garlic (4 cloves)
for 30 minutes. You may want to roast a few extra cloves just in case some burn, feel free to roast a whole head of garlic if you like!

Once the garlic is cooked, allow to cool and then remove the skin from 4 cloves. Using the back of your knife, mash garlic and
Coarse Salt (1 tsp)
into a paste on a cutting board.

In a medium bowl whisk together
Mayonnaise (1 cup)
,
Olive Oil (2 Tbsp)
, juice of the
Lemon (1/4)
, and garlic paste.
5.
Season to taste with
Salt (to taste)
if needed. Store in an airtight container in the fridge for 1-2 weeks.
