Preheat oven to 400 degrees F (200 degrees C).
Baby Potatoes (15)
in salted water till tender to a knife.
Strain, and place on a roasting tray.
Oil (2 Tbsp)
, and toss to coat.
Mash gently with a potato-masher.
Season lightly with
Salt (1 tsp)
Butter (1 Tbsp)
into little knobs. Add knobs of butter on each potato.
Sprinkle generously with freshly grated
Parmesan Cheese (2/3 cup)
Roast in the oven for 25-30 minutes or until crispy.
Serve immediately as is or with with chopped
Fresh Chives (to taste)
Sour Cream (to taste)
