Cooking Instructions

Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Boil Baby Potatoes (15) in salted water till tender to a knife.
Step 3
Strain, and place on a roasting tray.
Step 4
Drizzle with Oil (2 Tbsp) , and toss to coat.
Step 5
Mash gently with a potato-masher.
Step 6
Season lightly with Salt (1 tsp) .
Step 7
Separate the Butter (1 Tbsp) into little knobs. Add knobs of butter on each potato.
Step 8
Sprinkle generously with freshly grated Parmesan Cheese (2/3 cup) .
Step 9
Roast in the oven for 25-30 minutes or until crispy.
Step 10
Serve immediately as is or with with chopped Fresh Chives (to taste) or Sour Cream (to taste) . Enjoy!
