Cooking Instructions

Step 1
Peel Lemons (4 1/4 cups) with a peeler, trying to avoid the white pith if possible.
Step 2
Place the zest in one or two large glass mason jars and pour Vodka (1 bottle) evenly over top.
Step 3
Let the zest sit in the vodka for three or four days, shaking every so often. Strain the vodka (which will feel petrified), into a large bowl and discard the zest.
Step 4
Next, heat the Water (6 cups) and Granulated Sugar (2 1/2 cups) until the sugar is completely dissolved. Let cool completely.
Step 5
Add sugar-water mixture to strained vodka. Pour into bottles and store in the freezer.
Step 6
Let cure for four weeks. Serve as is or topped with heavy cream.
