Chop and dice Fresh Cilantro (1/4 cup), Scallion (3 stalk) and Tomato (2).
Season the Chicken Breast (1 pound) with Salt (1/8 teaspoon), Ground Black Pepper (1/8 teaspoon), Garlic Powder (1 teaspoon) and Onion Powder (1 teaspoon) on both sides.
Add Low-Sodium Chicken Broth (1 2/3 cup), Frozen Corn (1 cup), Canned Black Beans (15 ounce), cilantro, green onions, tomatoes, Ground Cumin (1 teaspoon) and seasoned chicken to a slow cooker. Cook on high for 6 hours.
Shred the chicken with a fork and serve over Brown Rice (1 1/2 cup) add extra toppings including more fresh cilantro or green onions. Serve and enjoy!
