Step 1
Place the
Powdered Confectioners Sugar (1/2 cup)
,
Ricotta Cheese (1 tub)
, and
Instant Espresso Powder (1/2 Tbsp)
in a food processor or blender. Blend for 1 minute.
Step 2
Scrape down the sides, add the
Vanilla Extract (1 tsp)
, and blend one more minute. The consistency will be thick and creamy, like a mousse.
Step 3
Fill 8 disposable shot glasses with the ricotta mixture to the top or fill 16 shot glasses half way. Cover and refrigerate 1-hour or overnight.
Step 4
For the shot glasses filled to the rim, garnish with
Chocolate (to taste)
or
Candy Canes (to taste)
. Serve chilled. For the shot glasses filled half way, top with
Whipped Cream (to taste)
, then garnish as desired.
Step 5
Top with a splash of
Rum (to taste)
for an adult version.
