A smoky Aperol cocktail with mezcal and honey. It’s also perfect for the end of summer/start of fall. It’s light and bright with the lime juice and honey, and a little smoky from the mezcal just in time for the weather to start cooling down

Honey Simple Syrup
Pour the White Mezcal (0.8 fl oz), Aperol (0.8 fl oz), 0.75 oz of the juice of a Lime (1), and Honey Simple Syrup (0.8 fl oz) into a shaker.
Add ice and shake vigorously for about 30 seconds. The tin portion of your shaker should be nice and cold.
Strain into a chilled coupe glass. Optionally garnish with fresh herbs!
If you don’t have honey simple on hand, it’s so easy. Scout’s honor. Grab a jar and add equal parts honey and hot water. Shake until the honey is incorporated into the water so it resembles a simple syrup and is easy to pour. I love honey, but honey chunks are not ideal in a cocktail.
