Step 1
Into a mixing bowl, add the Yellow Onion (1) , crushed Garlic (2 cloves) , Dried Mixed Herbs (1 Tbsp) , Short Cut Rindless Bacon Slices (4) , Olive Oil (2 Tbsp) , Salt (to taste) , and Ground Black Pepper (to taste) . Give that a good mix together.
Step 2
Line your slow cooker with a kitchen foil, and cover the base with baking paper. Layer 1/2 of your bacon mixture on the bottom.Top that with half of your quartered Baby Potatoes (10) . Layer that with Cheese (1 cup) ,and repeat the layers starting with the bacon mixture.
Step 3
Fold the paper over to cover the potatoes. Put the lid over the cooker, and cook the potatoes under auto mode for 6-8 hours.
Step 4
After about 6 hours, Sprinkle some Scallions (1 bunch) and serve!
