Into a mixing bowl, add the Yellow Onion (1), crushed Garlic (2 clove), Dried Mixed Herbs (1 tablespoon), Short Cut Rindless Bacon Slices (4), Olive Oil (2 tablespoon), and Salt and Pepper (to taste). Give that a good mix together.
Line your slow cooker with a kitchen foil, and cover the base with baking paper. Layer 1/2 of your bacon mixture on the bottom.Top that with half of your quartered Baby Potato (10). Layer that with Cheese (1 cup),and repeat the layers starting with the bacon mixture.
Fold the paper over to cover the potatoes. Put the lid over the cooker, and cook the potatoes under auto mode for 6-8 hours.
After about 6 hours, Sprinkle some Scallion (1) and serve!
