Cheesy Polenta is a delicious mashed potato substitute that is very simple to make. Chicken stock and water are combined with polenta (corn meal) and cooked until thick and fluffy. Mixed with cream cheese and freshly grated parmesan cheese, this amazing side dish is the work of minutes - give it a go!

Cooking Instructions

Add Chicken Stock (2 cups), Water (2 cups) into a large saucepan. Turn to high heat and once it's boiling, add Polenta (2 cups) and whisk it to make sure it's nice incorporated in the stock. Reduce the heat to low and stir this with a wooden spoon for about 10 minutes or until it's soft.

Then add Cream Cheese (1/2 cup) at Room Temperature (125) , Parmesan Cheese (1 cup) and mix them together. Season it with Salt (1 dash) and Ground Black Pepper (1 dash) Serve and enjoy!
