In a small bowl or measuring cup, whisk together Unsweetened Soy Milk (2 cups) and Apple Cider Vinegar (1 Tbsp). Set aside for 5 minutes.

In a large bowl, whisk together Unbleached All Purpose Flour (2 cups), Graham Cracker Crumbs (1/2 cup), Granulated Sugar (2 Tbsp), Baking Powder (2 Tbsp), and Salt (1/4 tsp). Add the milk mixture, Vanilla Extract (1/2 tsp) and Coconut Oil (3 Tbsp) and whisk until smooth.
