These vegan Funfetti Waffles are a party on a plate and are perfect for celebrating a birthday of someone who loves breakfast in bed. These vegan waffles are a super fun take on the classic funfetti cake recipe and are a piece of cake to make!

1 tablespoon Baking Powder
1/4 teaspoon Sea Salt
6 tablespoon Aquafaba , liquid from a can of chickpeas
1/3 cup Coconut Oil
1 cup Unsweetened Almond Milk
1/3 cup Sprinkles
to taste Vegan Whipped Cream

STEP 1
Preheat waffle iron.
STEP 2
In a large bowl, whisk together Unbleached All-Purpose Flour (2 cup), Organic Cane Sugar (1/4 cup), Baking Powder (1 tablespoon), and Sea Salt (1/4 teaspoon). Set aside.
STEP 3
In a mixer fitted with a whisk attachment, or in a bowl with a whisk or hand mixer, beat Aquafaba (6 tablespoon) until light and foamy and resembles whipped egg whites.
STEP 4
Add in Coconut Oil (1/3 cup), Unsweetened Almond Milk (1 cup), and Vanilla Extract (2 teaspoon) to the bowl to mixer and mix until smooth.
STEP 5
Add flour mixture and mix until well combined. Fold in Sprinkles (1/3 cup) until well incorporated.
STEP 6
Grease waffle iron and ladle or scoop batter onto the iron. Close and cook until the waffle is golden brown about 4 to 5 minutes.
STEP 7
Carefully remove wafffle from the iron and repeat. Serve waffles with Vegan Whipped Cream (to taste) or fresh fruit. Enjoy!
