These no bake energy balls are a quick and easy make ahead breakfast and snack for the whole week ahead. Perfect for school snacks and breakfast on the go. Plus these energy bites are vegan!

Ingredients

1/2 cup Raw Cashews
1/2 cup Quick Cooking Oats
1 tablespoon Cacao Powder
1/2 teaspoon Vanilla Extract
1 pinch Salt

STEP 1
In a food processor, combine Raw Cashews (1/2 cup), Quick Cooking Oats (1/2 cup), Dried Blueberries (3/4 cup), Medjool Dates (1/4 cup), Cacao Powder (1 tablespoon), Vanilla Extract (1/2 teaspoon), and Salt (1 pinch) until mixture is sticky.
STEP 2
Transfer to a bowl and refrigerate for 30 mins.
STEP 3
Using an ice cream scoop or spoon, scoop mixture into your hand and roll into a ball and place on a lined baking sheet or plate. Repeat with remaining mixture.
STEP 4
Cover and refrigerate balls for another 30 mins and then place in a sealed container to refrigerate for up to one week or in the freeze for up to 1 month.
