Step 1
Simmer
Pork Ribs (2 lb)
with
Scallions (2 stalks)

Onion (1)
,
Garlic Paste (1 Tbsp)
,
Tomato Paste (1 Tbsp)
and
Kosher Salt (to taste)
and
Cayenne Pepper (to taste)

Step 2
Simmer pork until very tender, but not falling apart. There should be about 1 quart of stock remaining; if not, adjust with water and additional seasonings. This should take an hour or more depending on the thickness.
Step 3
Remove pork to a cutting board, remove and discard bones, cut into bite-size pieces.
Step 4
Add
White Beans (2 cans)
. Blend until smooth!
Step 5
Add
Diced Tomatoes (1 can)
,
Black Beans (1 can)
,
Red Kidney Beans (to taste)
, and
Scallions (3 stalks)
. Simmer for 3 minutes.
Step 6
Add the pork and
Smoked Sausages (to taste)
, simmer for another 3 minutes, then check/adjust seasonings.
Step 7
Serve in large flat bowls and enjoy!
