Melt Coconut Oil (1/3 cup), then add Unsweetened Apple Sauce (1/2 cup), Pure Maple Syrup (2 Tbsp) and Vanilla Extract (1 tsp) and mix well.

In a separate bowl, mix White Whole Wheat Flour (1 1/4 cups), Baking Soda (1 tsp) and Salt (1/2 tsp). Add dry ingredients to wet and mix- add in Vegan Chocolate Chips (1 cup).

Grease a 24 count mini muffin tin with canola spray or portion out 24 cookies for suggested skinny serving size.

Bake for 10 minutes.

Let sit out of the oven for 10 minutes before removing from pan. Do not over-bake or they will dry out! Serve and enjoy!
