Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
Melt
Coconut Oil (1/3 cup)
, then add
Unsweetened Apple Sauce (1/2 cup)

Pure Maple Syrup (2 Tbsp)
and
Vanilla Extract (1 tsp)
and mix well.
Step 3
In a separate bowl, mix
White Whole Wheat Flour (1 1/4 cups)
,
Baking Soda (1 tsp)
and
Salt (1/2 tsp)
. Add dry ingredients to wet and mix- add in
Vegan Chocolate Chips (1 cup)
.
Step 4
Grease a 24 count mini muffin tin with canola spray or portion out 24 cookies for suggested skinny serving size.
Step 5
Bake for 10 minutes.
Step 6
Let sit out of the oven for 10 minutes before removing from pan. Do not over-bake or they will dry out! Serve and enjoy!
