Preheat oven to 350 degrees F (180 degrees C).

Melt Coconut Oil (1/3 cup), then add Unsweetened Apple Sauce (1/2 cup), Pure Maple Syrup (2 Tbsp) and Vanilla Extract (1 tsp) and mix well.

In a separate bowl, mix White Whole Wheat Flour (1 1/4 cups), Baking Soda (1 tsp) and Salt (as needed). Add dry ingredients to wet and mix- add in Vegan Chocolate Chips (1 cup).

Grease a 24 count mini muffin tin with canola spray or portion out 24 cookies for suggested skinny serving size.
