Whoever thought you could make good cookies without butter and eggs? The secret is refined coconut oil and finely ground flax meal! Together, they work wonders to create super soft & chewy cookies! Traditional home-baked cookies tend to get hard after a day or two- not these!

Cooking Instructions
1.
Heat oven to 350 degrees F (180 degrees C).

Add Coconut Oil (1/3 cup), Flaxseed Meal (1 Tbsp), Vegan Sugar (1/3 cup), Unrefined Dark Brown Sugar (1/3 cup), Water (4 Tbsp), and Vanilla Extract (1/2 tsp). Stir well.

Next add White Whole Wheat Flour (1 1/3 cups), Salt (1/2 tsp), and Baking Soda (1/2 tsp) and mix. Add in Vegan Chocolate Chips (1 cup).

Cover cookie sheet with parchment paper OR spray if needed.

Scoop 11-12 spoonfuls of dough onto cookie sheet- they get much bigger when baked!
6.
Bake for about 10 minutes until done- oven temps may vary so check often to find your magic number!
7.
Remove from hot cookie sheet and allow to stand for 10 minutes. These will stay soft and chewy for days if they last that long!
Author's Notes
This recipe makes about 16 2.5″ cookies- bake for 10 minutes.
Please grind the flax meal in a blender for about 20 seconds- it’ll blend in like flour and you won’t see it in the cookies- this is key to these cookies coming out as delicious as they do! For cookie bars, pour the dough into a 9x9 non-stick pan for 20-24 minutes. Double the recipe for a 9x13 cake pan and bake for 25-35 minutes. Bars are done when the middle of the pan is no longer gooey!
