Heat oven to 350 degrees F (175 degrees C)
Add Coconut Oil (1/3 cup), Flaxseed Meal (1 tablespoon), Vegan Sugar (1/3 cup), Unrefined Dark Brown Sugar (1/3 cup), Water (1/4 cup), and Vanilla Extract (1/2 teaspoon). Stir well.
Next add White Whole Wheat Flour (1 1/3 cup), Salt (1/2 teaspoon), and Baking Soda (1/2 teaspoon) and mix. Add in Vegan Chocolate Chips (1 cup).
Cover cookie sheet with parchment paper OR spray if needed.
Scoop 11-12 spoonfuls of dough onto cookie sheet- they get much bigger when baked!
Bake for about 10 minutes until done- oven temps may vary so check often to find your magic number!
Remove from hot cookie sheet and allow to stand for 10 minutes. These will stay soft and chewy for days if they last that long!
