Set oven to 302 degrees F (150 degrees C).
Place the Old Fashioned Rolled Oats (4 cup), Wheat Bran (2 cup), Dry Mixed Spice (1 teaspoon), Ground Cinnamon (2 teaspoon), Ground Nutmeg (1/2 teaspoon), Fresh Ginger (1/2 teaspoon), Honey (2 tablespoon) and Coconut Oil (3/4 cup) in a large bowl and mix well.
Pour onto a baking tray and spread out evenly. Sprinkle Coarse Sea Salt (1/2 teaspoon) over the granola and bake for about 15 minutes in the middle of the oven.
Turn the granola with a wooden spoon and bake for another 10 minutes, turn again and bake for a further 10 minutes until medium golden brown all the way through.
Now stir the Almonds (3/4 cup), Cashew Nuts (3/4 cup) and Sunflower Seeds (1/4 cup) through the granola, bake for a further 20 minutes, turning after 10 minutes to toast the nuts and seeds a little bit.
Once the granola is cooked and nicely browned stir through the roughly chopped Dried Apricot (1 cup) and set aside to cool.
Store in an airtight container in a cool place.
