Author's Notes

Makes 18-22 balls.

Store in the fridge for up to 2 weeks or the freezer for up to 3 months.

If the batter seems too wet or sticky add a touch more almond flour. If the batter seems too dry to roll into balls, add another Tbsp or two of water. Alternatively, add a Tbsp or two more water until the texture is perfect for rolling into balls.

Cooking Instructions

Step 1
Place Medjool Dates (10) , Pecans (3/4 cup) , Almond Flour (3/4 cup) , Ground Cinnamon (1 Tbsp) , Raw Cacao Powder (1/3 cup) , Chocolate Protein Powder (1 scoop) , Pure Vanilla Extract (1 tsp) , Water (1/4 cup) , and Maple Syrup (3 Tbsp) in a food processor. Pulse until it forms a ball-like sticky texture.
Step 2
Add Dark Chocolate Chips (1/2 cup) and pulse just until combined.
Step 3
Form the dough into 1.5-inch balls and roll in Unsweetened Shredded Coconut (as needed) or raw cacao powder.
