Cheesy Onion Crusted Baked Salmon

Something magical happens when you top food with mayonnaise and cheese and then bake it. It forms this amazingly crisp but still creamy crust.

1 thinly sliced Large Onion
1/4 cup Mayonnaise
2 tablespoon Lemon Juice
1/2 tablespoon Dijon Mustard
1/3 cup shredded Mozzarella Cheese

STEP 1
Preheat the oven to 400 degrees F (200 degrees C).
STEP 2
Thinly slice the onion.
STEP 3
Mince the garlic.
STEP 4
Shred the Mozzarella cheese.
STEP 5
Shred the Parmesan cheese.
STEP 6
Line a rimmed baking sheet with aluminum foil. Place the Salmon Fillet (2 pound) on the prepared baking sheet.
STEP 7
Season with salt and pepper. Season liberally, since the fish is very thick and the salt needs to penetrate all the way through to the center.
STEP 8
In a small bowl, combine the Mayonnaise (1/4 cup), Lemon Juice (2 tablespoon), Dijon Mustard (1/2 tablespoon), and minced Garlic (1 clove) The mixture should be thin enough to easily spread over the onions.
STEP 9
Cover the surface of the fish with the Onion (1) and creamy mayo mixture and spread it out evenly.
STEP 10
Top with the finely grated Parmesan Cheese (1/4 cup) and Mozzarella Cheese (1/3 cup).
STEP 11
Bake in the preheated oven for 15-18 minutes.
STEP 12
Then broil for 2-5 minutes, until the cheese is golden brown.
STEP 13
