A delicious, healthy, easy and inexpensive tuna croquette recipe with fresh dill. The combination of the tuna with the dill gives this recipe a superb lifting making an average tuna croquette into a superb croquette. Make it for dinner, lunch or as a finger food appetizer for any party.

Free Range Egg
Preheat oven at 425 degrees F (220 degrees C).
In a pan, sweat the Onion (1/2), Garlic (2 cloves), Long Green Peppers (1/4), and Red Chili Pepper (1/4) with Vegetable Oil (as needed) until soft.
When the vegetables are soft, add the Canned Tuna (1 cup) and leave to cook for 10 to 15 minutes then leave to cool.
In a large bowl, add the Mashed Potatoes (1.1 lb), Fresh Chives (2 Tbsp), Dried Parsley (2 Tbsp), Dill Pickles (1 Tbsp), and the cooled tuna.
Season with Salt (1/2 Tbsp) and Ground Black Pepper (1/2 tsp) and mix well with a wooden spoon and then with your hands as if kneading.
When the mix is well combined start to make the croquettes shaping as your preference.
Pass each croquette through the Free Range Egg (2) and then through the Breadcrumbs (to taste).
Place in a well buttered baking tray.
When all the mix has been used, place the tray in the oven for 30 minutes or until golden brown.
Serve and enjoy!
