Step 1
Remove the stem and pit of the Cherries (1 1/2 cups) .
Step 2
In bowl, mix your cherries and Cane Sugar (1 Tbsp) . Let sit for 2 hours or in the refrigerator overnight.
Step 3
Muddle your cherry and sugar mixture well. Try and get as much juice out as possible.
Step 4
Mix 6 tablespoons of cherry juice, the Water (1/4 cup) , Lime Juice (3 Tbsp) and Gin (3 fl oz) together.
Step 5
Put ice in your 2 cocktail glasses. Pour the gin mixture over the ice, drop in 1-2 tablespoons of the macerated cherry chunks, and add a slice of lime to serve.
