There are 2 types of porridge eaters, the creamy one and the chewy one. This recipe brings together the best of both! It does require some cooking, but it is going to be totally worth it. I am using coconut oil and almond milk, but you can use butter and cow milk if you prefer.

Add Oats (1 1/2 cups) to the oil and stir to coat. Keep stirring them around so they don’t burn, and remove them from the stove only when they start smelling toasty.

Pour in the Almond Milk (3 cups) and stir.

Let the mixture cool down, then place it in your fridge for 6-8 hours or overnight.

When ready to serve, place oatmeal back on the stove and bring it to a gentle simmer, stirring constantly so that the oats will release some starch, which will give you a creamy porridge. Add your favorite toppings and enjoy!
