Soak the Buckwheat Groats (1/2 cup), Pumpkin Seeds (1/4 cup), Sunflower Seeds (1/4 cup), and Dried Red Dates (1/2 cup) in water for 3 hours.
Place the soaked ingredients, Black Sesame Seeds (1 1/2 teaspoon), White Sesame Seeds (1 1/2 teaspoon), Unsweetened Shredded Coconut (1 cup), Ground Cinnamon (1/4 teaspoon), Cacao Powder (1/2 teaspoon), and Maple Syrup (2 tablespoon) into a food processor and blend until a paste forms.
Press the mixture into a baking tray lined with parchment paper.
Sprinkle with extra sesame seeds, coconut, and pumpkin seeds
Bake at 320 degrees F (160 degrees C), for 20-30 minutes. Remove from oven, and let it cool down completely.
Cut into 6 bars and enjoy!
