Step 1
Pat
Halibut Fillets (4)
dry with a paper towel and season generously with
Salt (to taste)
and
Ground Black Pepper (to taste)
on both sides.
Step 2
Whisk
Large Eggs (2)
together in a shallow bowl. In another bowl, add
Potato Flakes (1/2 cup)
and season with
Dried Parsley (1 tsp)
,
Salt (1/4 tsp)
, and
Ground Black Pepper (1/8 tsp)
.
Step 3
Heat
Olive Oil (3 Tbsp)
in a medium-sized nonstick skillet over medium heat until hot.
Step 4
Dunk one fish fillet into eggs to coat evenly, then place into potato flakes. Flip to coat evenly on both sides. Add to hot pan and repeat with remaining fish fillets. Pan fry for 2-3 minutes on each side, or until golden.
Step 5
Remove fish from pan and serve immediately with
Pickle Relish (to taste)
or
Tartar Sauce (to taste)
