Line an 8-inch square pan with parchment paper.
Old Fashioned Rolled Oats (2 1/4 cups)
Unsweetened Coconut Flakes (1/2 cup)
Sea Salt (1 pinch)
to a food processor.
Pulse a few times until the oats are coarsely ground. Transfer to a large bowl.
Stir together the
Coconut Oil (3/4 cup)
Coconut Sugar (1/2 cup)
Pour the coconut sugar oil mixture over the oats and stir to combine.
Pour half of the oat mixture into the bottom of the pan and press down firmly. Set aside.
70% Dark Chocolate (1 cup)
In a double boiler, melt the chopped chocolate.
Creamy Peanut Butter (3/4 cup)
and stir until smooth and well-combined.
Pour the chocolate mixture over the oat crust.
Then, sprinkle the remaining oat mixture over the top.
Refrigerate for at least 4 hours, or until firm.
Take it out of the pan and flip over to remove the parchment paper.
Cut into bars. Serve and enjoy!
