Step 1
Wash the
Raw Almonds (1 cup)
and place them in a jar with
Water (3/4 cup)

Salt (1 pinch)
, and
Milk Kefir (0.5 oz)
. Give it a stir.
Step 2
Cover the jar with a cheesecloth and let it ferment at room temperature for 36 hours.
Step 3
Place the almonds with the liquid and salt into a food processor and blend until smooth.
Step 4
Transfer the mixture into cheese strainers (like the one used for making ricotta) or into a cheesecloth and let it drain for 6-8 hours or overnight.
Step 5
Your vegan cheese is ready!
