Preheat oven to 400 degrees F (200 degrees C).
Place Salmon (1.5 pound) on a baking sheet lined with parchment paper or aluminum foil.
Whisk Extra-Virgin Olive Oil (1/4 cup), Dijon Mustard (2 teaspoon), and Apple Cider Vinegar (1 tablespoon) together. Pour over the fish and make sure the surface is covered.
Bake in the oven for about 18-20 minutes. The. salmon will be done cooking when the larges part of the fish easily flakes off.
Over medium heat, mix Orange Marmalade (1/2 cup), Apple Cider Vinegar (1/4 cup), Kosher Salt (2 teaspoon), and Fresh Rosemary (1 tablespoon) together until hot but not boiling, then remove from heat.
Pour over baked salmon and serve!
