Rosemary and Marmalade Glazed Salmon

1.5 lb Salmon
1/4 cup Extra-Virgin Olive Oil
2 tsp Dijon Mustard
1/2 cup Orange Marmalade

STEP 1
Preheat oven to 400 degrees F (200 degrees C).
STEP 2
Place Salmon (1.5 lb) on a baking sheet lined with parchment paper or aluminum foil.
STEP 3
Whisk Extra-Virgin Olive Oil (1/4 cup), Dijon Mustard (2 tsp), and Apple Cider Vinegar (1 Tbsp) together. Pour over the fish and make sure the surface is covered.
STEP 4
Bake in the oven for about 18 to 20 minutes. The. salmon will be done cooking when the larges part of the fish easily flakes off.
STEP 5
Chop the Fresh Rosemary (1 Tbsp).
STEP 6
Over medium heat, mix Orange Marmalade (1/2 cup), Apple Cider Vinegar (1/4 cup), Kosher Salt (2 tsp), and chopped rosemary together until hot but not boiling, then remove from heat.
STEP 7
Pour over baked salmon and serve!
