Ginger Sugar Syrup is extremely simple to make at home. This sugary syrup is infused with the fragrance of fresh ginger, with a bit of heat. Great for dessert and to spice up any drink.

Cooking Instructions

Tie Pandan Leaves (2) into a knot. Skin and slightly crush the Fresh Ginger (1/3 cup).

Add Granulated Sugar (1 1/4 cups), Water (1/2 cup), and crushed ginger into a small saucepan and cook over medium-low heat. Bring to a gentle boil, stirring constantly until the sugar is dissolved.

Reduce heat to low and allow to simmer for another 20 minutes. Remove pandan leaves and crushed ginger.

Remove from heat and strain the ginger sugar syrup. Leave to cool. Then transfer into a storing jar and keep refrigerated till needed.
Author's Notes
This recipe yields a little under 1 cup of ginger syrup. The syrup will continue to thicken slightly as you cool it.
Make this ginger sugar syrup ahead of time to give it time to chill. Also, it makes entertaining much easier.
If the ginger sugar syrup is stored properly, it should keep in the refrigerator for two to three weeks.
