Makes 5 cups.

Mixed nuts can be kept in an airtight container for up to two weeks.

Preheat oven to 225 degrees F (110 degrees C). Spray a large baking tray with Nonstick Cooking Spray (as needed).

In a large bowl toss together the Raw Almonds (1 cup), Raw Cashews (1 cup), Pecan Halves (1 cup), and Raw Peanuts (1 cup).

In a medium bowl whisk together Maple Syrup (1/3 cup), Brown Sugar (4 Tbsp), Large Egg White (1), Water (1 Tbsp), Chinese Five Spice Powder (1 Tbsp), and Sea Salt (as needed). Pour the syrup mixture over the nuts and stir to coat evenly.

Spread nuts evenly on a large baking tray.

Bake for 60 minutes, turning every 15 minutes. If using Dried Cherry (3/4 cup), stir them in halfway through the baking time.

Remove from oven and loosen from the baking tray. Allow the nuts to cool completely before breaking apart.
