Author's Notes

You can make pimento cheese ahead (up to a few days before is good) and leftovers will keep in the refrigerator for up to two weeks, although it’s best to use it up within a week. Be sure to keep it in an airtight container.

Place Philadelphia Original Soft Cheese (1/2 cup), Mayonnaise (1/4 cup), Pimiento Peppers (1 1/3 cups), Salt (1 tsp), and half of the Sharp Cheddar Cheese (1 3/4 cups) in a food processor, and pulse until well combined. Scraping down the sides to fully incorporate everything.

Once incorporated, transfer to a mixing bowl and add in the other half of the shredded cheese. Stir to combine.

Cover the bowl with plastic wrap and refrigerate for at least an hour to let the flavors marinate.

Garnish with Scallion (1 stalk), and chopped pimentos, and serve with veggie sticks or crackers if desired.
