Step 1
In a large stockpot, heat
Olive Oil (1/4 cup)
over medium heat. Cook the
Yellow Onion (1)
until soft and slightly browned, about 3 minutes.
Step 2
Pour in
Chicken Stock (2 cups)
and add
Cream Cheese (1)
. Stir to combine and simmer for about 3 minutes.
Step 3
Add in the
Rotisserie Chicken (1 lb)
,
Corn (1 can)
, and
White Beans (2 cans)
. Stir until combined.
Step 4
Stir in the
Chili Seasoning (1 packet)
,
Ground Cumin (1/2 Tbsp)
, and
Salt (to taste)
. Increase the heat to medium-high and continue simmering for 10 minutes or until the liquid is reduced and thickened.
Step 5
Remove from heat and add
Lime (1)
then stir to combine.
Step 6
Transfer to a serving bowl and top with
Shredded Parmesan Cheese (to taste)
,
Avocados (to taste)
,
Fresh Cilantro (to taste)
,
Tortilla Chips (to taste)
, and
Jalapeño Peppers (to taste)
