Cooking Instructions

In a large mixing bowl, add Sprite (1 can), Soy Sauce (1/2 cup), Garlic (6 cloves), and Ground Black Pepper (as needed). Mix until well combined. Then add Boneless, Skin-On Chicken Thighs (2 lb) and toss to coat. Cover with plastic wrap and marinate for at least 30 minutes or even better overnight in the fridge.

In a saucepan, add Crunchy Peanut Butter (1/3 cup), Soy Sauce (1/2 cup), Water (4 Tbsp), and Granulated Sugar (4 Tbsp). Turn the heat to medium and cook the sauce for about 5 minutes until thickened but still runny. Stir occasionally to prevent the sauce from sticking at the bottom. Once the sauce is done, set it aside.

Heat a grill pan or cast iron skillet over medium-high heat, once hot, place on the chicken skin side down. Grill for 5-8 minutes on each side. Repeat with the other batches if needed.

Serve the chicken with peanut sauce, White Rice (to taste), and Pickled Red Onions (to taste). Optionally, garnish with Scallions (to taste).
Author's Notes
If you marinate the chicken overnight, make sure to leave the chicken at room temperature before cooking.
Use a little bit of dark soy sauce for the color of the peanut sauce.
