Using a microplane, grate the peeled Garlic (1 clove) into a bowl. Zest the Lemon (1) into the same bowl, and then juice the lemon into the bowl.
Into the bowl, add the Chia Seeds (1 teaspoon), Extra-Virgin Olive Oil (1/4 cup), Honey (2 tablespoon) and Salt and Pepper (to taste). Whisk until smooth.
The dressing is now ready to be served. I like to serve it with butternut squash, cranberries and quinoa.
