Step 1
Using a microplane, grate the peeled
Garlic (1 clove)
into a bowl. Zest the
Lemon (1)
into the same bowl, and then juice the lemon into the bowl.
Step 2
Into the bowl, add the
Chia Seeds (1 tsp)

Extra-Virgin Olive Oil (1/4 cup)
,
Honey (2 Tbsp)
,
Salt (to taste)
, and
Ground Black Pepper (to taste)
. Whisk until smooth.
Step 3
The dressing is now ready to be served. I like to serve it with butternut squash, cranberries and quinoa.
