This is one of the simplest dishes but so subtle and delicious that I find my self longing for it when I need comfort food of the most delicate kind.

Free Range Chicken

Tianmu Bamboo Shoots

Cream of Chicken Soup

Concentrated Chicken Stock

Water
Cooking Instructions
1.
Wash and slice the Tianmu Bamboo Shoots (2 cups).
2.
Bring a pot of Water (2 1/2 cups) to a boil. Make sure there is enough room to fit the chicken. Wash the free Free Range Chicken (1). Place it in the boiling water for a minute or so.
3.
Add Cream of Chicken Soup (1/3 cup) and Concentrated Chicken Stock (3 tsp) to the pot with the chicken. Bring back to a boil.
4.
Cook at a simmer over low heat for 50 minutes. Add Salt (to taste) at the end.
5.
Top with the sliced bamboo shoots, serve and enjoy!
