Step 1
Into a pot of boiling water, add
Arborio Rice (3/4 cup)
. Cook for 5 minutes.
Step 2
Drain the rice and rinse with water.
Step 3
Into the pot, add
Milk (4 cups)
, the skin of the
Lemon (1)
and the
Cinnamon Stick (1)
. Cook until mixture begins to boil.
Step 4
Remove the lemon skin and the cinnamon stick. Turn the temperature down to low-medium heat and add the rice in with the milk. Cook for 15 minutes, stirring continuously.
Step 5
Add
Granulated Sugar (1 cup)
and
Butter (1 Tbsp)
. Cook for 1 minute, stirring to combine.
Step 6
Scoop rice pudding into bowls.
Step 7
Sprinkle
Ground Cinnamon (to taste)
over top.
Step 8
Place pudding in the fridge for 1-2 hours to chill.
