step 1
Season the Shrimp (5 oz) with Ground Black Pepper (1 pinch), Green Caribbean Seasoning (1 tsp) and Curry Powder (1 tsp). Mix and set aside to marinate.

Make about 4 incisions on each of the Thai Chili Peppers (5) without cutting through.
step 3
Slice the Bitter Melon (1) in half and using a spoon scrape the insides out.
step 4
In a large pan over medium heat add Vegetable Oil (2 Tbsp) and seasoned shrimp. Stir fry for about a minute and then remove and set aside on a plate.

Add more Vegetable Oil (1 Tbsp). Toss in the Thai chili peppers, Garlic (3 cloves), Fresh Ginger (to taste) and stir for 30 seconds.

Add in the Bitter Melon and stir continuously. Season with Salt (as needed) and continue to stir on low heat. Add Water (2 Tbsp) to steam and soften the bitter melon.

As the water steams up, add Brown Sugar (1 tsp) and stir. Let it cook for 4 minutes and then raise the heat to medium high.

Add the shrimp and stir for another 30 seconds. Serve and enjoy!
