On a plate add Ground Ginger (1/8 teaspoon), Brown Sugar (1 tablespoon) and Ground Cinnamon (1/4 teaspoon). Mix well and set aside.
Cut the edges off the Plantain (2), make a slight incision and peel the plantain. Cut away any imperfections. Slice it on an angle 1/4 of an inch thick.
On a pan over high heat, add Vegetable Oil (to taste) to completely cover the bottom of the pan. Add the slices of plantain and fry for about 2 minutes each side.
Remove the plantain slices once they are golden brown on both sides and place them on a plate with a paper towel to soak off the excess oil.
Top it with the cinnamon, brown sugar and ginger mix. Serve and enjoy!
