Author's Notes

Make sure you have a fish spatula handy. It has more bend than a normal metal spatula which enables you to get under a delicate piece of fish more easily.

Cooking Instructions

Heat your pan over medium heat WITHOUT OIL. As the pan heats up, pat the Salmon Fillet (1) dry with a paper towel. When searing or sautéing, you usually should heat your pan before adding any fat.

Add Vegetable Oil (3 Tbsp). Don't be afraid to add more if you are using a large pan. No need to worry, extra oil in the pan only ensures even cooking. The fish will not absorb this extra oil.

Immediately after adding the oil, lay the skin-side of the salmon fillet down away from you. Season the top with Kosher Salt (1 pinch) and Ground Black Pepper (1 pinch). Cook for 3 to 4 minutes. Laying the fillet away from you makes sure you do not splash yourself with hot oil.

Flip the fillet and cook for another 3 minutes for medium rare. If you are having trouble getting the salmon skin off the bottom to flip, it is not ready to flip!
