Remove the core out of all the Sorrel Flowers (19 1/2 cups) and discard.

Place the sorrel flowers, Dried Orange Peel (2 pieces), Cinnamon Stick (1), Whole Cloves (4) and Fresh Ginger (1 slice) in a large pot.

Cover with Water (8 cups) and bring to a boil.

Reduce to a gentle simmer and let it go for about 30 minutes.

Then remove off the heat, cover and let it steep for a few hours. Steep overnight for maximum flavor.

Strain and discard ingredients.

Chill and sweeten to your liking with Granulated Sugar (to taste).
