Step 1
Dissolve
Lime Gelatin (1 pckg)
in boiling
Water (1 cup)
. Let cool to room temperature.
Step 2
Stir in
Limes (1/2 Tbsp)
and
Lime Juice (1/2 cup)
.
Step 3
Add
La Lechera® Sweetened Condensed Milk (1 1/3 cups)
stirring until blended.
Step 4
Chill mixture until slightly thickened, stirring occasionally.
Step 5
In another bowl, combine
Whipping Cream (2 cups)
and
Powdered Confectioners Sugar (1/4 cup)
and mix until it forms stiff peaks.
Step 6
Pour thickened gelatin mixture into a medium-sized bowl.
Step 7
Fold in one-half of the sweetened whipped cream, saving the remainder for garnish.
Step 8
Stir in
Green Food Coloring (3 drops)
into the gelatin mixture, if desired.
Step 9
Pour gelatin mixture into cooled
Vanilla Wafer Pie Crust (1)
.
Step 10
Refrigerate until set for about 3 hours.
Step 11
Remove from refrigerator and cut into 8 equally-sized wedges. Place a dollop of reserved sweetened whipped cream on the top of each pie wedge. Place the
Limes (8 slices)
on top of each of the dollops of whipped cream.
Step 12
Serve immediately, or refrigerate until serving time. Enjoy!
